I absolutely agree. If you are on prep, you are 100% responsible for every prep that is needed. If you’re not on prep, you should assume whatever responsibility you are in for. One thing is for sure though, prep work should be a team effort. You can’t expect one person to run the kitchen and all the prep work at the same time.
