If you’re using a homemade recipe, you should look for a flour that is easy to grind and that will not stick to your hand. Also, the flour should not be too soft. It should be firm enough that you can press it easily between your fingers and that it does not crack.

A self rising flour that is too salty will not add the flavor that you are looking for. Also, the fat content should be low enough that it doesn’t interfere with the ability of the flour to support the chicken.
